Guest guest Posted May 18, 2002 Report Share Posted May 18, 2002 * Exported from MasterCook * Broadway Salad (Macaroni with Tofu) Recipe By :Camille Cusumano Serving Size : 8 Preparation Time :0:00 Categories : Pasta Salads Tofu Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SALAD: 1/2 pound tofu -- 1/2-inch cubes 1 teaspoon soy sauce 3 cups chopped cabbage -- (3-4) 1 cup cooked elbow macaroni 1/2 cup shredded carrots 2 scallions -- chopped 1 tomato -- (1-2) bite-size pieces 2 tablespoons toasted sunflower seeds DRESSING: 1/2 cup yogurt 1/4 cup mayonnaise 1/2 teaspoon lemon juice 2 tablespoons crumbled bleu cheese 1. Toss the tofu with the soy sauce. Place the cabbage, macaroni, carrots, scallions, tomatoes, and tofu in layers in a large bowl. Chill until serving time. 2. Gently whisk together the yogurt, mayonnaise, lemon juice, and bleu cheese. 3. Drizzle the dressing over salad or toss with the salad to coat all at once. Serve chilled. Sprinkle with sunflower seeds before serving.
