Freezing tofu puts an almost completely new product at your disposal. The

freezing process changes the soft cheese texture to a chewy meat-like one that I

find very pleasant and versatile. In fact, many cooks prefer frozen tofu in

recipes where a meat flavor and texture is desired. The color of tofu also

changes slightly as it freezes. It turns to a golden amber when frozen. As it

thaws the amber will fade to a creamy beige, and the water content will lessen

so the tofu will be higher in protein. You will be able to squeeze more water

from it just as you squeeze water from a sponge. The tofu will not crumble as

easily as it did before being frozen.

 

I often freeze tofu that is slightly old in order to prolong its usefulness.

When thawed its new porous texture will soak up the flavors even more readily

than unfrozen tofu.

 

To freeze tofu simply remove it from the water in which it is stored, and wrap

it tightly in plastic. You may freeze a whole block of tofu but to accelerate

freezing and defrosting, I cut it into slices and wrap them separately. For best

results freeze tofu for at least 10 hours. You can keep it frozen for up to 6

months. I find its chewy texture may seem tough and dry if you keep it much

longer than this.

 

Frozen tofu will thaw fairly quickly at room temperature. You can leave it

wrapped or unwrapped in a colander so the water can drain from it. Speed up the

thawing by placing the unwrapped frozen tofu in a pot and covering it with

boiling water. Allow whole blocks of tofu to remain immersed for about 20

minutes, or about 10 minutes for smaller pieces.
