Guest guest Posted May 15, 2002 Report Share Posted May 15, 2002 * Exported from MasterCook * Vegan Pumpkin Soup with Soy Milk Recipe By :Kurumi Hayter Serving Size : 4 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons soy margarine 1 medium onion -- sliced 1 potato -- peeled and chopped 1/2 whole orange flesh pumpkin -- peel, seed, chop 3 3/4 cups water 1 cup soy milk salt and white pepper 4 tablespoons soy cream chives -- for garnish 1. Melt margarine in a pan, add onion, potato and pumpkin and saute for 2 minutes. Add water and bring to a boil. Simmer for 30 minutes. 2. Allow to cool slightly, then puree in food processor. 3. Bring the liquid back to the pan and add the soy milk. Season with salt and pepper and reheat. 4. Serve; drizzle with a soy cream and garnish with chives.
