Black Bean And Rice Chili

Amount Measure Ingredient -- Preparation Method

1 cup chopped onions

2 cloves garlic -- minced

2 teaspoons olive oil

1 1/2 cups vegetable broth

1 cup canned crushed tomatoes

1 1/2 tablespoons chili powder

1 tablespoon cider vinegar

1/2 teaspoon ground cumin

1/4 teaspoon ground red pepper

1 bay leaf

1/4 cup quick-cooking rice

1/2 cup cooked black beans

 

Servings: 2

 

Cook onions and garlic in hot oil for 5 minutes, stirring often. Stir in

broth, tomatoes, chili powder, vinegar, cumin, pepper and bay leaf. Bring

to a boil. Reduce heat, Cover and simmer for 15 minutes.

 

Add rice and beans. Cover and simmer until rice is tender, about 10

minutes. Discard bay leaf.

 

Per serving: about 332 calories, 8.4 g fat (20% of calories), 0 mg

cholesterol, 118 mg sodium, 4.7 g dietary fiber.
