Guest guest Posted May 17, 2002 Report Share Posted May 17, 2002 * Exported from MasterCook * Black Bean Tacos With Orange Salsa Recipe By : Quick & Healthy Magazine, Summer 1996, page 88 Serving Size : 4 Preparation Time :0:00 Categories : Beans And Legumes Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large navel orange 1/3 cup diced sweet red peppers 1/4 cup slivered red onions 2 teaspoons red wine vinegar 1 tablespoon snipped fresh cilantro 1 jalapeno pepper -- seeded and minced 1 clove garlic -- minced 2 teaspoons olive oil 2 cups cooked black beans -- rinsed and drained OR 16 ounces canned black beans 4 6 inch corn tortillas -- warmed Nonfat sour cream -- garnish Makes 4 tacos Make the Orange Salsa first so its flavors have time to blend while the beans are cooking. In this recipe, the flavors and colors of citrus, sweet peppers and fresh cilantro mingle for an exceptionally refreshing and attractive dish. To make salsa: Peel and section orange over a bowl to catch juice. Quarter orange sections and combine with juice, sweet peppers, onions, vinegar and cilantro in same bowl. Cover and chill until ready to serve tacos. To make filling: Cook jalapeno peppers and garlic in hot oil in a nonstick skillet over medium-high heat for 3 minutes. Add beans to peppers. Cover and cook over low heat until hot about 5 minutes. Spoon bean mixture onto tortillas and roll up. Serve with orange salsa and garnish with sour cream.
