Cajun Rice

Amount Measure Ingredient -- Preparation Method

1 yellow onion -- chopped

1 green pepper -- chopped

1 bunch scallions -- chopped

2 cloves garlic -- crushed

1/2 pound fresh mushrooms -- cleaned and sliced

15 ounces canned low-sodium stewed tomatoes -- up to 16 ounces

1/4 cup chopped green chilies

1 teaspoon chili powder

1 teaspoon Cajun spice mix -- (see note)

1/4 cup chopped fresh cilantro or parsley

1 dash Tabasco sauce - or 2 dasjes

4 cups cooked brown rice

 

SERVINGS: 4. PREPARATION TIME: 10 MINUTES. COOKING TIME: 15 MINUTES

(COOKED RICE NEEDED)

 

Sauté the onion, green pepper, scallions, garlic, and mushrooms in a small

amount of water for 5 to 10 minutes. Add the remaining ingredients (except

for the rice) and mix well. Stir in the cooked rice, heat through, and serve.

 

NOTE: Some commercial Cajun spice mixes are now available. To make your

own Cajun spice mix, combine 3 tablespoons paprika, 2 teaspoons onion

powder, 2 teaspoons ground black pepper, 2 teaspoons ground white pepper, 2

teaspoons cayenne, 1 teaspoon ground dried oregano, 1 teaspoon ground dried

thyme, and 1/2 teaspoon celery seed. Mix together and store in a tightly

covered container. Makes about 1/2 cup.

 

Make extra rice for another day.
