To make your own Cajun spice mix, combine 3 tablespoons paprika, 2 teaspoons onion powder, 2 teaspoons ground black pepper, 2 teaspoons ground white pepper, 2 teaspoons cayenne, 1 teaspoon ground dried oregano, 1 teaspoon ground dried thyme, and 1/2 teaspoon celery seed. Mix together and store in a tightly covered container. Makes about 1/2 cup. Make extra rice for another day. - - - - - - - - - - - - - - - - - -
