Roasted Cauliflower With Red Pepper

Amount Measure Ingredient -- Preparation Method

1 medium head cauliflower -- (about 2 pounds)

cut into 3/4-inch pieces

1 large red pepper

cut into 1-inch pieces

1 garlic clove -- finely chapped

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon coarsely ground black pepper

 

PREP: 15 minutes. ROAST: 20 minutes. MAKES: 6 accompaniment servings

 

Preheat oven to 450F. In large bowl, toss cauliflower, red pepper, garlic,

oil, salt, and pepper until evenly coated. Arrange vegetables in single

layer 1n 15 1/2 " by 10 1/2 " jelly-roll pan. Roast vegetables 20 minutes or

until tender.

 

Each serving: About 45 calories, 2 g protein, 5 g carbohydrate, 2 g total

fat (0 g saturated), 2 g fiber, 0 mg cholesterol, 210 mg sodium.
