Rice & Bean Burritos

8 ounces packaged seasoned rice & beans

1 medium red bell pepper

cut in thin strips

4 1/2 ounces chopped green chiles

1/2 cup chopped fresh cilantro

4 burrito-size flour tortillas

 

Prep: 10 minutes.

 

Burrito-size flour tortillas come in a variety of flavors. We used spinach

with garlic and pesto. Of course you can also use plain.

 

1. Following package directions, omitting the oil or butter, cook rice in

a saucepan, adding pepper 3 minutes before rice is done. Remove from heat,

let stand 10 minutes, then stir in chiles and cilantro.

 

2. For each burrito: Place 1 tortilla on work surface. Spoon 1/4 the

rice mixture (about 1 cup) on bottom third. Roll bottom over filling then

fold sides over filling; continue rolling up. Place seam side down on plate.

 

Per serving: 392 calories, 11 g pro, 77 g carb, 6 g fiber, 4 g fat (1 g

saturated fat) 0 mg chol, 1,005 mg sod
