Blue Diamond Almond Curry Couscous

Amount Measure Ingredient -- Preparation Method

1 cup onion -- minced

1/2 cup celery -- small dice

1/2 cup carrots -- small dice

1/4 cup garlic -- minced

1/2 cup olive oil

6 tablespoons curry powder

3 quarts broth (chicken or vegetable)

3 pounds couscous

3 cups sliced almonds -- toasted

1 1/2 cups golden raisins

FOR GARNISH:

Sliced Almonds -- toasted

 

In large sauce pot, saute onions, celery, carrots and garlic in hot oil until

tender. Add curry powder and cook 2 minutes more. Add broth and heat to boiling.

Stir in couscous and raisins. Remove from heat. Cover and let stand 5 minutes.

Add 3 cups almonds, and fluff couscous with a fork. Adjust seasonings with salt

and pepper before serving. Garnish with additional toasted almonds.
