Guest guest Posted May 13, 2002 Report Share Posted May 13, 2002 * Exported from MasterCook * Wadas: Savory Split Pea Patties Recipe By : The (Almost) No Fat Holiday Cookbook, by Grogan, page 40 Serving Size : 40 Preparation Time :0:00 Categories : Beans And Legumes Main Dishes, Vegetarian Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup yellow split peas 2 tablespoons pickled jalapenos -- chopped 1/2 teaspoon dried red chile flakes 1/3 cup onion -- minced 2 tablespoons fresh ginger -- minced 2 tablespoons fresh cilantro -- minced 1 1/2 teaspoons salt 1 cup steam-fried cabbage -- chopped (2 c. raw) 1 teaspoon baking powder Makes 40 patties This is a somewhat unorthodox recipe for wadas - an oven-baked version. They are at their best when just taken out of the oven, but I've even munched them cold out of the refrigerator and been surprised at how tasty they are! NOTE: You need a food processor for this recipe. Rinse and soak the split peas for at least 4 hours in enough water to cover. Drain, rinse, and drain again. Place them in a food processor along with the jalapeños, chile flakes, and 3 tablespoons water. Add the onion, ginger, cilantro, and salt, and process until smooth. Add the cabbage and baking powder, and processor again. Place the batter in a bowl and refrigerate. The patties are easier to form when cold. Preheat the oven to 450F. With wet hands, form the batter into 24 1/4-thick patties, and place on 2 oiled cookie sheets. Bake for 5 minutes on each side. Serve hot with Tofu " Yogurt " (see separate recipe) and chutney.
