Soybean Falafel

1 small onion

2 garlic cloves

2 slices bread

1 teaspoon ground cumin

1 teaspoon ground coriander

1 fresh red chile pepper

1/2 teaspoon salt

1 tablespoon chopped fresh parsley

1/2 teaspoon salt

1 tablespoon chopped fresh parsley

1 egg

2 1/2 cups canned or frozen soybeans -- drained

all-purpose flour -- for coating

oil -- for frying

 

1. Put the onion, garlic, bread, cumin, coriander, chile, salt and parsley in a

food mixer and process them coarsely.

 

2. Ad the egg and soybeans and process again until coarsely chopped.

 

3. Form the bean mixture into balls (2 per serving); flatten to patty shape and

coat with flour.

 

4. Heat the oil in skillet and shallow fry the falafel until golden brown. Drain

well on paper towels.

 

SERVE stuffed in pita bread with salad such as lettuce, fresh tomatoes, a little

salsa or sliced cucumber, etc.
