Guest guest Posted May 12, 2002 Report Share Posted May 12, 2002 * Exported from MasterCook * Jamaican Coco Bread Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : San Jose Mercury News 5/8/02 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/4 cups flour 1 cup sugar 1 tablespoon baking powder 1/4 pound butter -- (1 stick) 1 1/3 cups grated fresh coconut 2 eggs -- beaten 1/2 teaspoon vanilla 2 cups heavy cream Preheat oven to 350 degrees. In a large bowl, mix flour, sugar and baking powder. Using pastry blender, work in butter. Add coconut and mix well. In separate bowl, beat eggs, vanilla and cream and add to flour mixture. Pour into a greased loaf pan and bake 40 to 45 minutes.
