Savory Bean Topping

Amount Measure Ingredient -- Preparation Method

1/4 cup water

1 onion -- chopped

1 15 ounce can stewed tomatoes

(Italian, Mexican, or Cajun)

2 15 ounce cans vegetarian baked beans

1 15 ounce can small red beans -- rinsed and drained

1/3 cup barbecue sauce

1/4 cup packed brown sugar

2 tablespoons prepared mustard

several twists of freshly ground black

pepper

 

Place the water and onion in a medium pot. Cook, stirring occasionally,

for 5 minutes. Add the remaining ingredients and cook for 15 minutes.

 

Serve over baked potatoes, whole grains, or whole wheat toast or muffins.

Serves 6 to 8.
