Guest guest Posted May 11, 2002 Report Share Posted May 11, 2002 * Exported from MasterCook * Marinara Spaghetti Sauce Recipe By : The McDougall Program, John and Mary McDougall, page 183 Serving Size : 4 Preparation Time :0:00 Categories : Sauces And Marinades Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 yellow onion -- finely chopped 1/2 pound fresh cleaned mushrooms -- finely chopped 2 garlic cloves -- crushed 15 ounces canned low-sodium stewed tomatoes -- up to 16 ounces 8 ounces canned low-sodium tomato sauce 15 ounces canned low-sodium tomato purée -- up to 16 ounces 1 teaspoon dried basil 1 teaspoon dried oregano 2 tablespoons parsley flakes Servings: 4-6, Preparation Time: 10 minutes, Cooking Time: 1 hour Make the sauce earlier in the day, if desired, and reheat just before serving. About 15 minutes before serving, drop 1/2 to1 pound egg-free whole wheat or spinach spaghetti noodles into 4 quarts boiling water and cook until tender, about 10 minutes. Serve the sauce over the noodles. Sauté the onions, mushrooms, and garlic in a small amount of water for 10 minutes. Add the remaining ingredients. Simmer over low heat 1 to 2 hours, until sauce thickens, breaking up the tomatoes as they cook.
