Guest guest Posted May 10, 2002 Report Share Posted May 10, 2002 * Exported from MasterCook * Spicy Cucumber Pasta Salad Recipe By : Pasta For All Seasons, by Robin Robertson, page 184 Serving Size : 4 Preparation Time :0:00 Categories : Salads, Vegetable Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces linguine 1/4 cup dark sesame oil -- PLUS 1 tablespoon dark sesame oil 2 cucumbers -- peeled and halved lengthwise 1 bunch scallions -- minced 1 teaspoon Asian chile paste -- or to taste 2 limes -- juice and zest of salt 1/4 cup minced fresh cilantro or basil Serves 4 I like to serve this refreshing Asian-inspired salad when I make vegetable sushi, to add substance to the meal. If you like, diced tofu may be added to the salad. Cook the linguine in a large pot of salted boiling water, stirring occasionally, until it is al dente, about 8 minutes. When the pasta is cooked, drain it, rinse under cold water, and place in a large serving bowl. Toss with 1 tablespoon of the sesame oil and set aside. Seed the cucumber halves, cut them into 1/4-inch slices, and add to the pasta along with the scallions. To make the dressing, combine the remaining sesame oil, chili paste, lime juice and zest, sugar and salt to taste in a small bowl. Pour the dressing over the pasta and cucumbers, sprinkle with cilantro or basil, and toss gently to combine.
