This recipe was posted before -- it was mentioned again in the book by Barnard

that I'm reading -- turn off the fat genes.

 

I think this will appeal to some of you who mention wanting quick tasty meals

for one person.

 

it's good on sweet potato ;-)

It's best if the black beans aren't too soft (mushy.) garnish with chopped bell

peppers

Black Bean Sauce

Amount Measure Ingredient -- Preparation Method

15 ounces canned black beans

1/2 cup roasted red peppers

2 tablespoons lemon juice

2 tablespoons tahini (sesame seed butter)

1/2 teaspoon chili powder

1/4 teaspoon cumin

1/4 teaspoon coriander

1/4 cup chopped fresh cilantro

 

Puree all ingredients in a food processor or blender.

 

[TIP - Try it on sweet potatoes, too.]
