Guest guest Posted May 9, 2002 Report Share Posted May 9, 2002 * Exported from MasterCook * Fresh Apple Muffins with Molasses Recipe By :Jennifer Raymond Serving Size : 12 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups whole-wheat flour -- (pastry) 1/2 cup sugar -- or other sweetener 2 teaspoons baking soda 1/2 teaspoon salt 2 cups finely chopped green apple 1 1/2 cups soy milk or rice milk 2 tablespoons cider vinegar 1/3 cup blackstrap molasses 3/4 cup raisins 1/4 cup chopped nuts -- (walnuts) 1. Preheat oven to 375F. Mix together the flour, sugar, baking soda and salt in a mixing bowl. 2. Quarter and core the apples, then chop them finely in a food processor or by hand. (Expected yield: 1 medium-large per cup). Place them into a large mixing bowl and add the milk, vinegar, and molasses. Stir until just mixed, then stir in the raisins and nuts. [Add the flour mixture; and stir until just mixed.] 3. Lightly spray muffin cups with vegetable oil spray and fill to top with batter. Bake 30 to 35 minutes, until the tops bounce back when lightly pressed. Remove the muffins from the oven and let stand about 5 minutes, then remove from the pan and cool on a rack. TIP - Store in an airtight container. TIP - Blackstrap molasses, which is a rich source of calcium and iron, is not particularly sweet -- hence the sugar in the recipe. If you choose to substitute regular molasses, which is significantly sweet, reduce the sugar or eliminate it altogether, depending on your preference for sweets.
