Guest guest Posted May 9, 2002 Report Share Posted May 9, 2002 * Exported from MasterCook * Herbed Bread Crumbs Recipe By : Stress, Diet & Your Heart, by Dean Ornish, page 185 Serving Size : 1 Preparation Time :0:00 Categories : Breads, Quick Condiments Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon safflower oil 2 large garlic clove 2 cups whole wheat bread crumbs 1/2 cup finely chopped flesh parsley 2 teaspoons grated lemon peel freshly ground pepper -- to taste Makes 3 cups. These make a nice topping for casseroles and a tasty addition to salads. They can be stored for a week or so in the refrigerator or they can be frozen. Heat the oil in heavy-bottomed skillet and add the garlic. Cook a few seconds then add the bread crumbs. Cook, stirring, until they begin to toast and dry, about 5 minutes. Stir in the remaining ingredients and sauté another 2 minutes or so. Remove from the heat. Note: Bread crumbs can be made in a blender or food processor. Cut slices of bread into quarters and run at high speed until uniform. In general, 2 slices of breed will yield 1/2 cup bread crumbs. Stress, Diet & Your Heart by Dean Ornish.
