Buckwheat Noodle Salad With Hot And Sour Dressing

1/2 pound buckwheat noodles

1 cup mung bean sprouts

1 small cucumber -- peeled

and coarsely grated

1 small zucchini -- cut in matchsticks

1/2 cup Roasted Soybeans

(see separate recipe)

5 radishes -- sliced

5 green onions -- sliced

4 mushrooms -- sliced, up to 5

3 tablespoons chopped fresh coriander -- (cilantro)

Hot and Sour Dressing

(see separate recipe)

1 washed and dried head lettuce -- leaves separated

 

Serves 4

 

Bring a large pot of water to a boil and add the buckwheat noodles. Cook

al dente, which should take about 4 to 5 minutes, drain, and rinse with

cold water. Toss with the remaining ingredients, except the

lettuce. Refrigerate for an hour or so, or serve at once, in a bowl or on

a platter lined with lettuce leaves.
