Guest guest Posted May 9, 2002 Report Share Posted May 9, 2002 * Exported from MasterCook * Four Bean Salad For a Crowd Recipe By :Jennifer Raymond Serving Size : 50 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 15 ounces canned dark kidney beans -- drained 15 ounces canned black-eyed peas -- drained 10 ounces frozen lima beans -- thawed 15 ounces canned vegetarian chili beans 1 large red bell pepper -- diced 1/2 cup finely chopped onion 2 cups corn kernels -- fresh or frozen DRESSING: 1/4 cup seasoned rice vinegar 2 tablespoons vinegar (apple cider or distilled) 1 lemon -- juiced 2 teaspoons ground cumin 1 teaspoon ground coriander 1/8 teaspoon cayenne Drain the kidney beans, black-eyed peas, and lima beans and combine in a large bowl. Add the chili beans, along with their sauce. Stir in the bell pepper, onion and corn. Whisk the remaining ingredients together and pour over the salad. Toss gently to mix. Chill before serving, if possible. TIP - Dennison's and several other companies make chili beans without meat. Look for them in your supermarket; if you can't find them ask the manager to order them. TIP - Try using a sweet vidalia onion or a red Bermuda onion in this recipeboth of these have a milder raw flavor than regular yellow or white cooking onions.
