Guest guest Posted May 8, 2002 Report Share Posted May 8, 2002 * Exported from MasterCook * Crostini with Sun Dried Tomatoes Recipe By :Jennifer Raymond Serving Size : 20 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 sun dried tomato halves 2/3 cup roasted red peppers 1 garlic clove -- crushed 2 tblsps freshly chopped basil or 1 tsp dried basil 1/8 tsp. black pepper 1 loaf baguette or Italian bread -- 1/4-inch slices 1. Pour boiling water over the tomatoes and set aside until softened, about 20 minutes. Pour off the water and coarsely chop the tomatoes. Place in a mixing bowl. 2. Chop the roasted red peppers and add to the tomatoes, along with the garlic, basil, and pepper. 3. Preheat oven to 350F. Place the bread on a baking sheet and bake until crisp and lightly browned, 10 to 15 minutes. 4. Remove from the oven and cool slightly, then spread each piece with the tomato mixture. TIP - Save the soaking liquid from sun-dried tomatoes and use it in place of vegetable stock in other recipes. TIP - Roasted red peppers are available in most supermarkets. Look for them in jars near the pickles. Be sure to choose a water-packed variety. Or for a fresher taste you can roast your own by blackening whole peppers in the broiler. Simply place whole pepper on a rack or pan under the broiler and allow them to blacken on all sides. Turn them occasionally until they are charred (about 10 minutes). Remove the peppers with tongs and place in a paper bag for 10 minutes to " sweat " and cool. The cooled pepper can then be easily peeled and chopped.
