Guest guest Posted May 8, 2002 Report Share Posted May 8, 2002 A local restaurant makes a Thai dish that spicy -- red or yellow curry paste -- and coconut milk, lime leaves, and high sugar green beans. They usually stir fry it with beef or chicken but I want to try it at home with cubed fried tofu. the whole thing would be served with jasmine rice. I have several recipes but wonder if anyone has a tested recipe that's similar. i want to use light coconut milk -- which won't be as rich as the restaurant's sauce. do you have a recipe like this? pat Quote Link to comment Share on other sites More sharing options...

Pat, Yes, I have one Tested many times - it probably is my favorite Thai curry. I used to always make it with a green Thai curry paste made from scratch, which will keep in the refrigerator up to 2 weeks. You can however use commercial pastes and play with yellow, green or red pastes. Since my fabulous homemade green curry paste contains shrimp paste, I will not post it here. If anyone is interested just send me an e-mail and the recipe will come your way. This reminds me when I took a strict vegetarian friend of mine to my favorite Thai restaurant. I had eaten there many times, always " vegetarian " or so I thought. After my friend send the 3rd dish back, because it was not vegetarian in her eyes, I realized that every Thai curry paste contains some kind of shrimp etc, and every curry dish probably has some fish sauce (made from anchovies).
