Guest guest Posted May 8, 2002 Report Share Posted May 8, 2002 * Exported from MasterCook * Spicy Green Beans Recipe By :Jennifer Raymond Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound green beans 2 teaspoons toasted sesame oil 8 garlic cloves -- finely minced 2 tablespoons seasoned rice vinegar 2 tablespoons soy sauce 1/4 teaspoon dried red pepper flakes Rinse the beans, trim the ends, and break into 1-inch pieces. Steam over boiling water until tender, 7 to 10 minutes. Heat the oil in a non-stick skillet and sauté the garlic for 3 minutes. Stir in the vinegar, soy sauce and red pepper flakes, then add the cooked beans. Cook 1 minute and then transfer to a serving dish. TIP - Fresh green beans should be very smooth, soft, and velvety for best flavor and texture. Pass them by if they are wrinkled and leathery. TIP - The papery skins on garlic can be easily removed using a chef’s knife. Lay the flat edge on the blade on top of the garlic clove and hit it firmly with the palm of your hand. You should hear a slight cracking sound as the skin breaks, then it can be easily peeled from the clove. TIP - Choose " lite " or " reduced-sodium " soy sauce to reduce your sodium intake.
