Guest guest Posted May 8, 2002 Report Share Posted May 8, 2002 * Exported from MasterCook * Gingerbread (No Added Fat) Recipe By :Jennifer Raymond Serving Size : 9 Preparation Time :0:00 Categories : Breads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup raisins 1/2 cup pitted dates -- chopped 1 3/4 cups water 3/4 cup sugar or other sweetener 1/2 teaspoon salt 2 teaspoons ground cinnamon 1 teaspoon ginger 3/4 teaspoon nutmeg 1/4 teaspoon cloves 2 cups whole-wheat pastry flour 1 teaspoon baking soda 1 teaspoon baking powder 1. Combine the raisins and dates with the water, sugar and seasonings in a saucepan and bring to a boil. Boil for 2 minutes, then remove from heat and cool completely . 2. Preheat the oven to 350F. Stir the flour, baking soda and baking powder together in a large bowl. Add the cooled fruit mixture and stir just enough to mix. 3. Spread into a 9 x 9-inch pan which has been sprayed with a nonstick spray and bake for 30 minutes, or until a toothpick inserted into the center comes out clean. TIP - To keep the gingerbread light and tender, stir the batter only enough to remove the lumps. TIP - Serve with homemade or purchased natural applesauce.
