Simply Delicious Winter Squash

Amount Measure Ingredient -- Preparation Method

1 small butternut squash -- (about 4 cups diced)

1/2 cup water -- (1/2 to 1)

2 teaspoons lite soy sauce

1 tablespoon maple syrup

 

Peel the squash, then cut it in half and remove the seeds. Cut the squash into

1-inch cubes (you should have about 4 cups). Place into a pot with the water,

soy sauce, and maple syrup. Cover and simmer over medium heat until the squash

is fork tender, about 15 minutes.

 

TIP - Try this recipe with other varieties of winter squash, like delicata or

kabocha. Each has its own distinctive flavor and they’re all delicious prepared

in this way.

 

TIP - Winter squashes are an excellent source of beta-carotene.
