Broccoli with Mustard Sauce

Recipe By :Jennifer Raymond

Serving Size : 4 Preparation Time :0:00

Categories : Side Dishes

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 bunch broccoli -- (about 8 cups)

1/4 cup seasoned rice vinegar

1 teaspoon stone ground or Dijon-style mustard

1 garlic clove -- minced

1. Break the broccoli into bite-sized flowerets. Peel the stems and slice them

into 1/2-inch thick rounds. Steam until just tender, about 5 minutes.

2. While the broccoli is steaming, whisk the dressing ingredients in a serving

bowl. Add the steamed broccoli and toss to mix. Serve immediately.

TIP - Broccoli stems are delicious and nutritious. Peel and cook them along with

the broccoli, or use them raw in salads for delicious, crunchy texture.

TIP - Did you know that a large stalk of broccoli contains 5 grams of protein

and 150 mg of calcium? It’s also a good source of beta carotene and folic acid.

TIP - The dressing in this recipe is delicious on other cooked vegetables as

well. Try it on asparagus, green beans, and cauliflower.
