Guest guest Posted May 8, 2002 Report Share Posted May 8, 2002 maybe you'd like to try spicy seitan for sandwiches etc. (I have not tried it yet) * Exported from MasterCook * Seitan Pastrami Recipe By :Cheese Factory Restaurant, Wisconsin Dells, WI Serving Size : 16 Preparation Time :0:00 Categories : Grains Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 dried shiitake mushrooms -- discard stems 1/2 cup hot water 2 tablespoons vegetarian beef flavored powder 1/2 cup boiling water 12 ounces seitan mix 1/4 cup vegetable oil 1/4 cup Vegetarian Worcestershire sauce 1 1/2 tablespoons minced garlic 1 1/2 tablespoons whole black peppercorns 1 1/2 tablespoons liquid smoke flavoring 1 1/2 tablespoons whole fennel seeds 1 tablespoon dried oregano -- crumbled 1 tablespoon dried thyme -- crumbled 2 teaspoons dried rosemary leaves -- crumbled 1 1/2 teaspoons salt Reconstitute shiitakes in hot water for 20 minutes. Drain; discard water. Mince shiitakes. Prepare broth by dissolving powder in boiling water. Combine all the ingredients in a large bowl of an electric mixer; knead 15 minutes using paddle attachment. (or knead by hand.) Form mixture into a loaf; let rest for 20 minutes. Wrap loaf in foil and bake in preheated 350F for 45 minutes. Remove foil and bake an additional 15 minutes or until surface starts to brown. Remove from oven and cool completely. Using a serrated knife, slice loaf as thinly as possible (cut on the diagonal to make larger longer slices. Store in an airtight container. VARIATION: replace the 1/2 cup prepared bouillon with 3 tbs soy sauce.
