Vary this one by adding a few red kidney beans.... changing the spices to herbs etc... * Exported from MasterCook * Spinach Salad with Curry Dressing Recipe By :Jennifer Raymond Serving Size : 8 Preparation Time :0:20 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup peanuts 3 tablespoons seasoned rice vinegar 1 tablespoon sesame seeds 3 tablespoons frozen apple juice concentrate 8 ounces fresh spinach leaves -- washed 2 teaspoons stone ground or Dijon mustard 1 tart green apple -- diced 1 teaspoon soy sauce 2 green onions with tops -- thinly sliced 1/2 teaspoon curry powder 1/4 cup sultana or golden raisins 1/4 teaspoon black pepper Spread the peanuts and sesame seeds in an oven-proof pan and bake at 375F for 10 to 15 minutes. Cool Combine the spinach with the apple, onions, and raisins in a large salad bowl. Add the cooled peanuts and sesame seeds. Whisk the vinegar, apple juice concentrate, mustard, soy sauce, curry powder, and black pepper together in a small bowl. Just before serving, pour over the salad and toss to mix. TIP - You can save time by using pre-washed spinach which is sold in most supermarkets. TIP - Most dried fruit is prepared with sulfites, which cause respiratory problems in some individuals. If you are sensitive to sulfites, use sultanas instead of the golden raisins, or substitute chopped organic dried apricots. Both of these are processed without sulfites. TIP - You can make the salad and the dressing ahead of time, but wait to combine them until just before serving.
