Guest guest Posted May 8, 2002 Report Share Posted May 8, 2002 * Exported from MasterCook * Mushroom Minestrone Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 oz. sliced fresh mushrooms -- (about 2 cups) 1 medium onion -- chopped 2 cloves garlic -- minced 1 Tbsp. olive oil 4 cups vegetable broth or boullion 1/2 cup small pasta 1 can diced tomatoes -- (16 oz.) 1 can garbanzo beans (chick peas) -- (15 oz.) rinsed and drained 1/4 cup chopped fresh herbs of choice -- (basil, oregano, thyme, parsley, etc.) In a soup pot saute mushrooms, onion, and garlic in oil until tender. Add broth and bring to a boil. Stir in pasta and cook until pasta is al dente. Stir in tomatoes (undrained) and garbanzo beans; heat through. Just before serving stir in fresh herbs.
