Guest guest Posted May 7, 2002 Report Share Posted May 7, 2002 * Exported from MasterCook * Medley Of Asian Greens With Sesame & Soy Nuts Recipe By : Prevention Magazine, January 2002, page 161 Serving Size : 4 Preparation Time :0:00 Categories : Side Dishes Soyfoods Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon sesame seed oil 1 teaspoon vegetable or olive oil 1 tablespoon chopped fresh ginger 1 tablespoon minced garlic 1 tablespoon lightly toasted white sesame seeds 8 cups assorted Asian greens cut into 1 " diagonal slices 4 tablespoons oyster-flavored sauce (vegetarian mushroom sauce) plus additional for seasoning 1/2 teaspoon white pepper plus additional for seasoning 1 teaspoon brown rice or seasoned rice vinegar -- (optional) 1 tablespoon black sesame seeds 2 tablespoons lightly toasted roasted soy nuts Makes 4 side-dish servings Asian greens, such as boy choy or baby bok choy, mizuna, napa cabbage, or Chinese kale, also called gai lan, or Chinese broccoli. 1. In a saute pan or wok, heat both oils until very hot, about 1 minute on medium high. Add the ginger, garlic, and white sesame seeds and toss until the aromas are released and the ingredients are lightly browned, about 30 seconds. 2. Add the greens, toss to coat, and saute for 1 or 2 minutes. Add the oyster-flavored sauce, and toss again for approximately 1 minute longer. 3. Add the pepper and vinegar (if using), and toss well to mix all of the ingredients. Cover the pan to allow the released water to finish steam-cooking the greens for 1 minute longer. 4. Remove the cover, add additional oyster-flavored sauce and white pepper if desired, and transfer to a serving platter. Garnish with the black sesame seeds and soy nuts.
