Mushroom " Cheese " Omelet

1 tablespoon safflower oil

1/4 cup minced onion

1 cup sliced mushrooms

1 pound medium tofu -- squeezed

and patted dry

1/8 teaspoon turmeric

1/2 teaspoon salt or less -- to taste

1/8 teaspoon freshly ground pepper

1/4 cup shredded soy mozzarella

1 tablespoon minced fresh parsley

 

4 servings

 

Serve with home-fried potatoes and soy sausage or tempeh bacon for a

hearty, protein-packed meal.

 

Heat the oil in a large sauté pan over medium heat. Add the onion and cook

until softened, about 5 minutes. Add the mushrooms and cook, stirring

occasionally, until they release their liquid. Continue cooking until the

liquid is reabsorbed. Add the tofu, sprinkle with the turmeric, salt, and

pepper, and cook for 3 to 5 minutes, stirring occasionally, until the tofu

is heated though and the liquid is absorbed.

 

To serve, divide the hot tofu mixture among four serving plates and pat

into an omelet-shaped crescent with a spatula. Sprinkle each portion with

the shredded soy mozzarella and parsley.
