Guest guest Posted May 3, 2002 Report Share Posted May 3, 2002 another from this book.... * Exported from MasterCook * Greek Salad and Smoked Tofu Wraps Recipe By :Wendy Sweetser Serving Size : 4 Preparation Time :0:00 Categories : Sandwiches Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 7 ounces smoked tofu -- cubed 2 tablespoons olive oil 1 zucchini -- sliced 4 flat breads 4 tablespoons hummus 2 large tomatoes -- cut into thin wedges 12 pitted black olives 1 shallot -- thinly sliced 1 cup feta cheese -- cubed 3/4 cup arugula leaves 1. Toss the tofu cubes with the olive oil and sear on a very hot griddle or heavy skillet for 2 minutes, turning over once or twice. Remove and add the zucchini slices to the pan. cook for 5 minutes until the slices are softened and scorched on both sides. 2. Spread the flat breads with the hummus and divide the tofu, zucchini slices, tomato wedges, olives, sliced shallot, feta and arugula leaves among them. Roll up and serve.
