Guest guest Posted May 3, 2002 Report Share Posted May 3, 2002 * Exported from MasterCook * Gado Gado with Tofu Peanut Coconut Dressing Recipe By :Wendy Sweetser Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- FOR THE PEANUT DRESSING: 1 teaspoon fresh lemon grass puree 1 garlic clove -- crushed 1 teaspoon chili sauce 2 tablespoons sunflower oil 1/2 cup crunchy peanut butter -- (no sugar added) 3/4 cup coconut milk 1 lime -- (the juice) 2 teaspoons brown sugar 2 teaspoons dark sweet soy sauce 9 ounces firm tofu -- small cubes FOR THE SALAD: 1 cup diced sweet potato 2 medium carrots -- thinly sliced 1/2 cup cut green beans -- (1/2-inch pieces) 1/2 cucumber -- sliced 2 pineapple rings (1/2-inch) -- cut into chunks 1/2 cup bean sprouts 1/2 cup shredded bok choy chopped red chile -- for garnish 1. For the dressing, place all the ingredients except the tofu in a bowl and beat together until smooth. Stir in the tofu and set aside for at least 1 hour. 2. To make the salad, cook the sweet potato and carrots in a pan of boiling water for 5 minutes or until tender. Drain and refresh in cold water. Pat dry with paper towels. 3. Blanch the beans in a pan of boiling water for 1 minute, drain, refresh and pat dry. Mix the cooked vegetables with the cucumber, pineapple pieces, bean sprouts, and shredded bok choy. Pile the vegetable mixture in a serving dish. Spoon over the peanut and tofu dressing, garnish with the chopped red chile and serve at once. TIPS * Lemon grass puree is sold, bottled, in the UK. To make 1 tablespoon: finely grate 1 inch length of lemon grass. * Sweet dark soy sauce can be found in Thai markets. It might be called Si-iew (pronounce approximately " see yew " ) or ketjap manis. it can be approximated by simmering 1/2 cup (125 ml) soy sauce with 2 tablespoons each of molasses and dark brown sugar until the sugar dissolves. * Green beans: French or dark green beans with higher sugar such as Blue Lake.
