Guest guest Posted May 3, 2002 Report Share Posted May 3, 2002 going to try this one soonest -- * Exported from MasterCook * Tofu Minestrone Recipe By :Wendy Sweetser Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 2 medium carrots 1 medium onion 1 medium turnip 2 3/4 cups fat-free vegetable broth 2 3/4 cups tomato pasta sauce 2 teaspoons pesto sauce 9 ounces lowfat firm tofu 2 celery ribs 1 large zucchini 3/4 cup fresh French green beans 14 ounces cooked cannelini beans -- rinsed 2 teaspoons chopped fresh sage grated fresh Parmesan cheese -- for garnish 1. Peel and finely dice the carrots, onion and turnip. Thinly slice the celery. slice the zucchini. Trim the green beans, and cut into short lengths. Drain the tofu; pat dry. Cut into cubes. 2. Heat the oil in a large pan, add the carrots, onion and turnip and saute for 5 minutes. 3.Pour in the broth and tomato pasta sauce and add the pesto and tofu. Bring to a boil, lower the heat, cover and simmer gently for 25 minutes. 4. Add the celery, zucchini, both beans and sage and simmer 15 minutes more or until all the vegetables are tender. 5. Ladle into deep soup bowls and garnish each serving with grated Parmesan.
