Rice Egg Rolls with Smoked Tofu and Sugar Snap Peas

Amount Measure Ingredient -- Preparation Method

1 cup tiny broccoli florets

1 large carrot -- matchsticks

2 tablespoons vegetable oil

1/2 cup sugar snap peas -- halved

4 ounces smoked tofu -- batons

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

1 small bunch cilantro leaves -- shredded

12 rice flour pancakes

Hoisin or plum dipping sauce -- to serve

 

1. Blanch the broccoli florets and carrot sticks in a pan of boiling water for 3

minutes and then drain. Cool by running cold water over them.

 

2. Heat the oil in a wok or skillet, add the sugar snap peas, broccoli, carrot

sticks, and tofu batons, and stir-fry for 5 minutes. Stir in the soy sauce, rice

vinegar, sesame oil, and cilantro leaves, and remove from the heat.

 

3. Dip a rice flour pancake in hot water for a few seconds to soften it. Place

on a board and spoon some of the tofu mixture onto one half. Roll the pancake

around the filling to make a cone. Repeat with the remaining pancakes and tofu

mix until it has all been used.

 

4. Eat cold or heat through in a steamer for 5 minutes just before serving.

Serve accompanied with a dish of hoisin or plum dipping sauce.
