This book -- " tofu for health " doesn't pay much attention to cals/fats as a health issue. the ideas for using tofu are kinda fun... * Exported from MasterCook * Potato Pizza Recipe By :Wendy Sweetser Serving Size : 4 Preparation Time :0:00 Categories : Appetizers New Import Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 large potatoes 5 tablespoons olive oil 1 teaspoon fresh garlic puree 9 ounces firm tofu -- sliced 2 tablespoons pesto sauce 1/2 eggplant -- sliced thin 1 red onion -- peeled and sliced thin 1/2 cup chevre (goat cheese log) -- sliced Freshly ground black pepper 1. Peel the potatoes and cut into even-size pieces. Cook in a pan of boiling water until tender, then drain and mash with 2 tablespoons olive oil and the garlic. 2. Preheat the oven to 425F. Spoon the potato onto a baking sheet and press out into a 12-in round. Arrange the tofu slices over the potato. 3. Mix 1 tablespoon olive oil with the pesto and brush over the tofu. Arrange the eggplant, onion, and chevre slices on top, and brush with the remaining olive oil. Season with black pepper and bake in the oven for 15 to 20 minutes.
