Carrot Salad

Amount Measure Ingredient -- Preparation Method

4 medium carrots -- shredded

1 tablespoon chopped fresh parsley

1 tablespoon basil

1 tablespoon scallions -- chopped

3 tablespoon lemon juice -- fresh

2 tablespoons safflower oil

Salt and freshly ground pepper -- to taste

 

Combine all ingredients in a mixing bowl, toss & serve.
