Banana and Mango Bread

1 cup butter

1 1/4 cups brown sugar

3 eggs

3 cups flour

2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon -- ground

1/4 teaspoon nutmeg -- ground

1 1/2 cups bananas -- mashed

1 mango

1 cup golden raisins

1/2 cup walnuts -- chopped

 

In a large bowl, cream together butter with brown sugar until fluffy;

beat in 3 eggs, one at a time, until well blended.

 

In a medium bowl, sift together flour, baking powder, baking soda,

salt, cinnamon, and nutmeg.

 

Place mango in a blender or food processor. Puree for 2 minutes, add

to mashed bananas. Mix the dry ingredients and the banana/mango

mixture, alternately, into the creamed mixture until batter is just

combined, then fold in golden raisins and chopped walnuts. Pour the

batter into 2 greased loaf pans.

 

Bake in a 350 degree oven for 50 to 60 minutes, or until the center

is set. Cool in loaf pans for 10 minutes, then remove from the pans

and cool on wire racks.
