Mint Sauce

Amount Measure Ingredient -- Preparation Method

1 pound Chinese pea pods (snow peas or sugar peas)

--ends and strings removed -- (opt.)

1/4 cup sour cream

1/4 cup mayonnaise

2 tablespoons fresh mint leaves -- coarsely chopped

 

In a wide frying pan, cook peas, if used, in 2 inches boiling water just

until bright green (about 30 seconds). Drain, immerse in ice water, and

drain again. Set aside.

 

In a blender or food processor, whirl sour cream, mayonnaise, and mint

until mint is finely chopped. Transfer to a small bowl and arrange on a

platter with peas, if used.
