Lime-A-Beans (Spicy Edamame)

16 ounces frozen edamame beans -- (12 to 16)

- in the shell

SEASONING MIX:

4 tbsps salt

2 tsps onion powder

2 tsps garlic powder

1/2 tsp ground cumin

1 tsp paprika

2 tsps mild pure chile powder

 

Pam Savage makes these at Lime and at home. She says to be sure to use

the pure ground red chile available in packages in the Mexican aisle of

the grocery, not the chili powder in the spice section. Eat the beans by

scraping them out of the pod with your teeth. Do not eat the pod.

 

Serves 4-6 as an appetizer.

 

Bring a large pot of salted water to a boil. Add beans and boil for 5-6

minutes. Drain and dust with seasoning mix.
