Guest guest Posted May 2, 2002 Report Share Posted May 2, 2002 xpost: eatL, veg-recipe another broth recipe to try. * Exported from MasterCook * Italian Vegetable Broth Recipe By :Paola Scaravelli and Jon Cohen Serving Size : 12 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons butter 3 onions -- chopped 2 celery stalks with leaves -- chopped 2 leeks (white and green) -- chopped 3 carrots -- chopped 2 cups shredded cabbage 1/2 cup lentils 1 cup peeled diced potatoes 1/2 teaspoon dried thyme 1/2 cup chopped parsley 1/4 cup chopped basil 8 whole peppercorns -- or more 3 garlic cloves 2 bay leaves 1/2 teaspoon salt pinch nutmeg 3 quarts water 1. Melt the butter in a stockpot and saute together the onions, celery, leeks and carrots for a few minutes, until the onion begin to color. Stir in all the remaining ingredients, add the water, bring to a boil. Reduce the heat and simmer covered for 2 hours. Remove from the heat and use as required. Yield is approximate. VARIATION: use olive oil instead of butter and use one-third the quantity: 84 Calories; 2g Fat (18.1% calories from fat); 4g Dietary Fiber. Exchanges: 1/2 Grain(Starch); 0 Lean Meat; 1 1/2 Vegetable; 1 Fat. NOTES : Use this broth on its own, strained or unstrained, or add rice or soup pasta. Use strained in recipes that require vegetable broth. For a light cream of vegetable soup, puree the vegetables, add cream and serve. The broth will keep up to a week in the refrigerator or may be frozen. Nutr.
