This was dinner the other night - Bulghur Cheese Casserole. It was really good

and I served it with a salad (I love mesclun combinations and use them a lot).

Bulghur-Cheese Casserole

 

Recipe By : Adapted from The Pride of Peoria, Jr League of Peoria

Amount Measure Ingredient -- Preparation Method

2 tbsp vegetable oil

1/2 lg onion -- chopped

2 cloves garlic -- minced

1 cup bulghur wheat -- uncooked

1 1/2 tsp kosher salt

2 cups water -- or more

1 egg

1/4 cup water

1 cup small-curd cottage cheese

1 tbsp Bayou Blast seasoning -- or other cajun mix

1 lg ripe tomato -- sliced

1 cup cheddar cheese (4 oz) -- shredded

 

Preheat a large skillet over medium heat. Heat oil. Saute onion and garlic. Add

bulghur, salt and the water; cook 20 minutes or until liquid is absorbed.*

 

Combine egg and 1/4 cup water; stir in cottage cheese and Bayou Blast. Place

three-fourths of bulghur mixture on bottom of a 2 qt casserole. Layer sliced

tomato, cottage cheese mixture and remaining bulghur in casserole. Sprinkle with

cheddar cheese. Bake at 350°F for 30 minutes. Yield: 6-8 servings

NOTES : Risa's notes:

 

* I usually cook bulghur the following way: Place bulghur and seasonings in a

container or microwave container. Cover with boiling water. Cover and let stand

for 20 minutes.

You can do this with this recipe. Just add bulghur, cooked onions & garlic

mixture to a container large enough to hold it all when cooked. Top with boiling

water (2 cups or a bit more) and cover. Let stand.

 

 

YES, you need two different water additions in this recipe. The ingredient list

is correct. It looks strange but once you make it you will understand why.
