Recipe By :Robin Robertson

Serving Size : 6 Preparation Time :0:00

Categories : Beans

Amount Measure Ingredient -- Preparation Method

-------- ------------ --------------------------------

1 tablespoon olive oil

1 small onion -- minced

1 small carrot -- grated

4 vegetarian burgers -- thawed

1/2 cup ground walnuts

1 cup fresh bread crumbs

1 cup cooked brown lentils -- drained well

(dry lentils double when cooked)

1/4 cup soft tofu

2 tablespoons tahini

1 tablespoon tamari soy sauce

1 tablespoon minced fresh parsley leaves

Salt and freshly ground black pepper

gravy

1. Preheat the oven to 350 degrees F. Lightly oil a 9 x 5-inch loaf pan.

2. Heat the oil in a small skillet over medium heat. Add the onion and carrot,

cover, and cook, stirring a few times, until softened, 5 to 7 minutes. Set

aside.

3. Chop or crumble the vegetarian burgers and place in a large bowl. Add the

walnuts, bread crumbs, and the onion mixture. Pulse the lentils in a food

processor until coarsely chopped, and add to the mixture.

4. In the food processor, process the tofu, tahini, tamari, and parsley until

well blended. Stir into the walnut mixture, season to taste with salt and

pepper, and transfer to the prepared pan. Smooth the top of the loaf.

5. Bake the loaf until firm and golden brown, 40 to 50 minutes. Let rest for 10

to 15 minutes.

6. Meanwhile, heat the gravy in a small saucepan.

7. Slice the loaf and serve with the gravy.
