Marvelous Mushroom Sauce

Amount Measure Ingredient -- Preparation Method

1 tablespoon olive oil

1 small yellow onion -- grated

1 garlic clove -- minced

4 ounces mushrooms -- sliced (about 1 cup)

2 tablespoons all-purpose flour

1 1/2 cups vegetable stock or water

2 tablespoons tamari soy sauce

1 teaspoon minced fresh thyme leaves

or 1/2 teaspoon dried

Salt and freshly ground black pepper

 

1. Heat the oil in a medium saucepan over medium heat. Add the onion and garlic,

cover, and cook, stirring a few times, until softened, about 5 minutes. Add the

mushrooms and cook, stirring, for 2 minutes longer. Stir in the flour and cook,

stirring, for 1 minute.

 

2. Stir in the stock, tamari, thyme, and salt and pepper, to taste. Cook,

stirring, until thickened, 3 to 5 minutes. Serve hot.

 

TIP - To achieve a darker brown color, add 1/2 teaspoon or so of gravy seasoning

liquid (such as Gravy Master, which contains no animal products) or molasses to

the sauce near the end of cooking time.
