Guest guest Posted May 1, 2002 Report Share Posted May 1, 2002 * Exported from MasterCook * Cardamom Spiced Lentil Potato Wraps Recipe By :Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Beans Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 tablespoons olive oil 1/2 cup minced onion 1 cup cooked brown lentils -- drained well (dry lentils double when cooked) 1 cup cooked potatoes 1/2 cup coarsely chopped cashews 2/3 cup dry bread crumbs 1 tablespoon minced fresh parsley leaves 1/2 teaspoon ground cardamom 1/2 teaspoon salt 1/8 teaspoon cayenne 4 loaves warm Indian flatbread (such as roti or paratha) Mango Mint Chutney 1. Heat 1 tablespoon of the oil in a large skillet over medium heat. Add the onion, cover, and cook, stirring a few times, until softened, about 5 minutes. 2. Transfer to a food processor and add the lentils, potatoes, cashews, bread crumbs, parsley, cardamom, salt, and cayenne. Process until well combined, leaving some texture. Turn out into a bowl, and shape the mixture into 8 small patties. 3. Heat the remaining 2 tablespoons oil in a large skillet over medium heat. Add the patties and cook, turning once, until browned on both sides, about 5 minutes per side. Place 2 patties end to end on the lower third of each flatbread, spread with the chutney, and roll up. Serve immediately. If an Indian bread is unavailable, pita bread makes a good alternative. The Fresh Mango-Mint Chutney (page 318) is the ideal condiment, but a store-bought chutney can be used if you prefer. Nutr.
