Salad Of Greens And Oranges

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

1 tablespoon fresh lemon juice

2 tablespoons orange juice

2 teaspoons honey or brown sugar -- or as needed

Salt and freshly ground black pepper

2 medium-size navel oranges -- peeled, up to 3

pith removed and sectioned

2 cups torn lettuce leaves

2 cups torn endive

 

Serves 4.

 

A salad that marries the bitter lettuce and citrus with a light, sweet-tart

dressing.

 

In large bowl, whisk together oil, lemon juice, orange juice and honey or

brown sugar. Add salt and pepper. Adjust seasonings to taste. Add

oranges, lettuce and endive; toss well.
