Five Spice Oatmeal Date Cookies

DRY:

1 cup all-purpose flour

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground allspice

1/4 teaspoon ground ginger

1/4 teaspoon ground clove

1/2 teaspoon baking powder

pinch salt

WET:

1/2 cup corn oil

1/2 cup firmly packed light brown sugar

(or a natural sweetener)

2 large eggs

(or egg replacer)

2 tablespoons cold water

1 teaspoon vanilla extract

1 1/2 cups old-fashioned rolled oats

3/4 cup chopped pitted dates

 

These chewy cookies boast a quintet of aromatic spices along with healthful oats

and dates, making them good tasting and good for you.

 

1. Preheat oven to 350F. Lightly oil two baking sheets.

 

2. In a medium size bowl, whisk together the flour, cinnamon, nutmeg, allspice,

ginger, cloves, baking soda and salt. Set aside.

 

3. Place the oil and brown sugar in a large bowl and, using an electric mixer,

beat until well blended. Beat in the eggs, water and vanilla until blended. Add

the dry ingredients and beat just until blended. Stir in the oats and dates.

 

4. Drop the batter by rounded tablespoonfuls about 2 inches apart onto the

prepared baking sheets. Bake until golden, about 15 minutes. Allow the cookies

to cool completely before storing in an airtight container.

 

 

WHEN BAKING, REPLACE 1 EGG WITH:

* 1 1/2 tsp powdered ener-G Egg plus 2 tbs water;

* 1 tbs flaxseed and 3 tbs water -- grind in a blender until thick and frothy (1

minute);

* 1/4 cup soft tofu and 1/4 tsp baking powder -- blend with other liquids in

recipe;

* 1/4 cup pureed fruit, such as applesauce or mashed banana with 1/4 tsp baking

powder
