Guest guest Posted May 1, 2002 Report Share Posted May 1, 2002 * Exported from MasterCook * Marinated Tofu Wraps Recipe By :Robin Robertson Serving Size : 2 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup olive oil 1/4 cup balsamic vinegar 1 garlic clove -- minced 1/2 teaspoon sugar 1/2 teaspoon salt 1/8 teaspoon cayenne 8 ounces extra-firm tofu -- cut in 1/4-inch-wide strips 1 small red bell pepper -- seeded and chopped 1 medium carrot -- finely shredded 1 large ripe tomato -- chopped 1 lavash or 2 large wheat tortillas 1 cup shredded romaine lettuce 0ne of the most appealing qualities of tofu is its ability to absorb surrounding flavors-it was made to be marinated! Lavash is a large Middle Eastern flat bread available at ethnic and specialty markets. If it is unavailable, large tortillas make a good substitute. In a shallow bowl, combine the oil, vinegar, garlic, sugar, salt, and cayenne. Add the tofu and spoon the marinade over it. Set aside to marinate for 1 hour, turning once. Heat a large skillet over medium-high heat. Remove the tofu from the marinade with a slotted spoon and transfer to the skillet. Stir-fry to sear the tofu, then remove and set aside to cool. Add the bell pepper, carrot, and tomato to the reserved marinade and toss to coat. Remove the vegetables from the marinade with a slotted spoon, or drain in a strainer, and set aside; discard the marinade. Place the lavash (or tortillas) on a work surface. Line the tofu strips across the lower third of the bread and top with the vegetable mixture and lettuce (if using tortillas, divide the filling evenly between them). Starting at the bottom edge, roll up the sandwich(es) into a cylinder. Cut in half and serve.
