Shiitake-Stuffed Tofu Steaks with Hoisin Glaze

2 tablespoons peanut oil

4 ounces shiitake mushrooms -- stems discarded and caps chopped

3 scallions -- minced

1 garlic clove -- minced

1 tablespoon peeled and minced fresh ginger

Salt and freshly ground black pepper

1 pound extra-firm tofu -- cut into 4 equal slices

1/3 cup hoisin sauce

 

The tofu absorbs flavor from both the garlic-and-ginger-infused shiitake

stuffing and the sweet and sassy hoisin sauce that glazes the outside. When

cutting the pockets in the tofu, be careful not to cut too close to the edges.

 

Heat 1 tablespoon of the oil in a small skillet over medium heat. Add the

mushrooms, scallions, garlic, and ginger and cook, stirring, until softened,

about 3 minutes. Season with salt and pepper to taste and set aside to cool.

 

Carefully cut a pocket in the side of each slice of tofu. Stuff the tofu with

the mushroom mixture.

 

Heat the remaining 1 tablespoon oil in a large skillet over medium heat. Add the

tofu and cook until golden brown on the first side. Turn and cook for 1 minute

longer. Add the hoisin sauce to the pan, spooning it over the tofu to coat.

Carefully turn the tofu over to be sure both sides are glazed with hoisin, and

serve at once.
